Baked Apple Oatmeal

My dad loves oatmeal. Before going to school he used to make this delicious oatmeal with cinnamon… I still remember how it tasted. This is nothing like it, but I started living oatmeal because of him.  I got this recipe from @penandspoon book and decided to make it for him.

I wanted to surprise him with a different breakfast. He is so traditional that he still cooks his oatmeal as he did 20 years ago.

Here is what you’ll need to create this recipe — feeds the whole family

Ingredients:

  • Unsalted butter, for greasing.

  • 2 cups rolled oats.

  • 2 apples, peeled and chopped into small cubes.

  • 1/2 cup organic raisins.

  • 1/2 cup of chopped hazelnuts.

  • 2 tsp cinnamon.

  • 1/2 tsp salt.

  • 1/4 cups of vegetal milk.

  • 3 tablespoons of honey.

Instructions:

  1. Preheat the oven to 325F.

  2. Stir the oatmeal, chia seeds, apples, raisins, cinnamon and salt together in a large bowl. Stir in 1 1/2 cup of boiling water, the milk and honey. Pour the mixture into the prepared pan and bake for 30 minutes.

  3. Remove the pan from the oven and stir the oatmeal thoroughly, adding a splash more water if needed to produce the texture desire. Sprinkle coconut sugar on top and let it cook for 5 more minutes.
