Lemon Pancakes

I love pancakes. My dad used to wake me up every Sunday with a delicious breakfast and it was always around nutella pancakes. 

Of course, as I grew up. I learned that nutella was not healthy and full of sugar. I started getting more into creating new recipes with flourless flour, I find relaxing getting into the kitcken to try different Of course, as I grew up. AlI can say is that I love my healthy versions – they filled me with the nutrients that I need to start my day right.

On this occasion I wanted a savory and sweet flavor. They turned out to be fluffy as I normally would have them. If you are more than 1 just double the measurements.

Ingredients:

  • 1/2 cup oat flour.

  • 1/2 cup coconut milk.

  • 1/4 coconut yogurt.

  • 1 teaspoon baking powder.

  • Stevia to sweeten.

  • Lime juice & lime zest.

Instructions:

  1. In a large bowl add all the flours, yogurt, lemon juice, stevia, milk and whisk.

  2. Heat a pan with ghee.

  3. Add the mixture and let it cook for 2 min on both sizes.

    For the topping:

    1. Add 1/3 cup coconut yogurt.

    2. 1 tablespoon of Plenah pecan butter.

    3. 1 tablespoon of honey.

    4. Lime zest to taste.

    5. Whisk all ingredients together.
