Plenah’s Egg Salad

I started my journey with egg salads, when I moved to NY back in 2017. My aunt used to take me to her favorite place to have breakfast, and of course, that included a bagel. 

I absolutely love everything bagels, toasted scoop in with egg salad and chive cream cheese.

Of course, I can't have bagels everyday as I wish one could. I made this egg salad thinking of giving myself a treat as well as giving the nutrients I need to keep my body going through the day.

You’ll need:

  • 2 boiled eggs.

  • 1/2 avocado.

  • 2 tablespoons of @kitehillfoods cream cheese

  • Dill to taste.

  • 1/2 Purple onion.

  • 1 tablespoon of mustard.

  • Salt and pepper to taste.

  • 1 slice of sour dough bread.

Instructions:

  1. Boil 2 eggs and cut them into pieces.

  2. Add avocado, purple onion, cream cheese, mustard salt, pepper and mix well.

  3. Serve with sourdough bread or any bread you have available. 

    Topping:

    Red pepper flakes & @traderjoes everything but the bagel seasoning 🤸🏼‍♀️
